Pumpkin Spice Donuts





I made pumpkin donuts this past weekend because I just can't wait any longer for fall!! They were so easy and turned out perfectly moist and not overly sweet. 
Here is the recipe...


Ingredients:
(Yields about 18 donuts; I used a Wilton donut pan)
1 3/4 cup all-purpose flour
1 3/4 tsp baking powder
1 1/4 tsp salt
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/3 tsp ground ginger
3/4 cup granulated sugar
3/4 cup packed light-brown sugar
1/2 cup canola oil
3 large eggs
1 1/2 cups canned pumpkin puree
1 tsp vanilla extract

Directions: 

Preheat oven to 350 degrees. Butter your doughnut pan (I used a 6-hole pan). 

In a mixing bowl whisk together flour, baking powder, salt, cinnamon, nutmeg and ginger; set aside. 
In a seperate mixing bowl, whisk together brown sugar and granulated sugar. 
Add canola oil, eggs, pumpkin puree, and vanilla. Mix until well blended. 
Slowly add dry mixture and mix until well combined. 
Fill a plastic bag with the batter and cut the tip off of one corner. 
Use this as a piping bag to fill each hole with batter. 

Bake in preheated oven for about 13-15 minutes. Cool doughnuts slightly. 
In a seperate large resealable bag, shake together 1/3 cup sugar and 1.5 tsp cinnamon. Gently shake each donut in bag to lightly coat with sugar mixture. 
Place on cooling rack. Store in airtight container.
